This cookie's a home run! | By Susie Iventosch | | | This may sound rather preposterous, but I have this really good friend, whom I've never actually met! He and I became acquainted over a political issue and have apparently been email buddies ever since. His name is Jeff and his wife's name is Sue. I've never met either of them face to face. It just so happens that I have another good set of friends, also named Jeff and Sue, whom I have known for years because our daughters were great friends all through school.
Well, around the time I first got an email from my new friend, Jeff, I had also just been in contact with my old friend, Jeff, about the very same issue. The email address simply said "Jeff and Sue," so I assumed it was the original Jeff and Sue. And, when the "new" Jeff emailed me, I thought I was corresponding with the "old" Jeff and continued to think so for almost a year. We "email" chatted about politics, family and other fun topics.
My "old" friend is a banker, and really, at the time, I didn't even realize that I had a new friend named Jeff. It wasn't until I had a banking question, and emailed "new" Jeff to see what he suggested, that I came to learn that he was not, in fact, a banker, or even the Jeff I thought he was, but a former restaurant owner and someone I'd never even met before!
Oh boy, did we ever get a chuckle over this hilarious misunderstanding. But, I am so happy to have my new friend, because being a former restaurant owner he is always sending me fun new recipes to try. When he sent this one, I was thrilled, because I love anything and everything made with pecans, and these cookies are no exception. They are absolutely fantastic, buttery, brown-sugar shortbread with chopped pecans lightly toasted in melted butter.
Jeff found the recipe in a cookbook (Best of Country Cookies) that features recipes from a 1999 national recipe contest that was sponsored by Taste of Home. I've changed the recipe slightly because I found the original recipe had too much flour and was very difficult to shape into cookies. But the idea is the same, and it is a lovely cookie!
